Ingredients
  

For the Chicken Marinade

  • 4 pieces Chicken pieces Use your choice of chicken cuts.
  • 1/2 cup Peri peri sauce Adjust according to spice preference.
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lemon juice Freshly squeezed.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.

For the Accompaniments

  • 2 cups Potatoes Boiled.
  • 1 pinch Saffron For flavoring the potatoes.
  • 2 pieces Zucchini Chopped.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix the peri peri sauce, olive oil, minced garlic, lemon juice, salt, and pepper.
  • Coat the chicken pieces with the mixture and marinate for at least 30 minutes.

Cooking

  • Place the marinated chicken on a baking tray and bake for 30-40 minutes until cooked through.
  • Meanwhile, boil the potatoes, adding a pinch of saffron for flavor.
  • Chop the zucchini and roast it in the oven alongside the chicken for the last 15 minutes.

Serving

  • Serve the peri peri chicken with saffron potatoes and roasted zucchini.
  • Add some fresh herbs or extra lemon wedges for garnish.

Notes

Tips: The longer you marinate the chicken, the more flavor it will absorb. For milder food, use less peri peri sauce or a milder variety. Use a meat thermometer; the internal temperature should reach 165°F (75°C).
