Ingredients
  

For the Marinade

  • 370 ml fire-roasted red peppers
  • 4 pieces Thai chili peppers Adjust quantity to taste.
  • 1 large lemon (zest and juice)
  • 1/3 cup red wine vinegar
  • 4 cloves garlic (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons smoked paprika
  • 1/3 cup olive oil Add gradually while blending.

For the Chicken

  • 2 pounds chicken pieces (bone-in skin-on) Can substitute with shrimp or tofu.

Preparation

  • Blend all marinade ingredients except for olive oil in a food processor until smooth.
  • Gradually add olive oil while blending until combined.
  • Coat chicken pieces in half of the marinade and refrigerate to marinate for 4 to 24 hours.

Cooking

  • Preheat your grill to medium-high heat or your oven to 425°F.
  • If grilling, cook the chicken for about 20 minutes, turning occasionally until the internal temperature reaches 160°F.
  • If baking, place the chicken on a tray and bake for about 30 minutes.

Notes

For an extra depth of flavor, let the chicken marinate overnight. If sensitive to spice, reduce the number of Thai chili peppers. Use a thermometer to ensure chicken is cooked perfectly. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
