Main Ingredients

  • 3 pieces lobster tails (roughly 9 ounces each) Use fresh lobster tails for the best flavor.
  • 1.5 tablespoons avocado oil (plus more for the grill grates)
  • 1 stick butter (clarified and divided) Use half for basting and half for dipping.
  • 1 tablespoon parsley (freshly chopped) For garnish.
  • 3 pieces lemons (cut into wedges)

Instructions
 

Clarified Butter Preparation

  • Melt the butter in a saucepan over low heat. Once melted, let it sit for a few minutes so the milk solids settle to the bottom. Carefully pour the clear liquid into a bowl, leaving the milk solids behind. This is your clarified butter.

Prepare the Lobster Tails

  • Using kitchen scissors, cut down the top of the lobster shell to the tail. Gently pull the sides apart to expose the meat without fully separating it from the shell.
  • Brush the exposed meat with avocado oil and sprinkle with kosher salt.

Prepare the Grill

  • Preheat your grill to medium-high heat, making sure to oil the grill grates to prevent sticking.

Grill the Lobster

  • Place the lobster tails meat side down on the hot grill.
  • Grill for about 5-7 minutes, until the meat is opaque and cooked through, while basting with clarified butter.
  • Once done, remove from the grill and let them rest for a few minutes.

Notes

For added flavor, experiment with different seasonings such as garlic or herb blends. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out.
