  • 1 cup mozzarella cheese, shredded Feel free to mix with other cheeses.
  • 1/2 cup pepperoni slices Can be substituted or omitted for a vegetarian option.
  • 1 tablespoon butter Olive oil can be used for extra crispiness.
  • 1/4 cup pizza sauce Use as much or as little as desired for flavor.

Cooking

  • Heat a skillet over medium heat.
  • Butter one side of each slice of bread.
  • Place one slice of bread, buttered side down, in the skillet.
  • Layer with mozzarella cheese, pepperoni slices, and a bit of pizza sauce.
  • Top with the second slice of bread, buttered side up.
  • Cook until the bottom slice is golden brown, about 3-4 minutes.
  • Carefully flip the sandwich and cook the other side until golden brown and the cheese is melted.
  • Serve with additional pizza sauce for dipping.

Notes

For varied flavors, use different cheeses, add veggies like bell peppers or mushrooms, and try olive oil for a crispy exterior. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
