  • 2 cups cooked rice Use leftover rice for quicker preparation.
  • 1 cup pepper jack cheese, shredded Can be substituted with other cheeses.
  • 1 cup mixed vegetables (such as bell peppers, corn, and peas) Feel free to mix in your favorite vegetables.
  • 1 cup milk Use vegetable broth for a vegetarian version.
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 teaspoon red pepper flakes (optional) Add more for extra heat.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine cooked rice, mixed vegetables, milk, sour cream, garlic powder, onion powder, salt, and pepper.
  • Stir in the shredded pepper jack cheese until well combined.
  • Transfer the mixture to a greased baking dish.
  • If desired, sprinkle additional cheese and red pepper flakes on top.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  • Allow to cool for a few minutes before serving.

Notes

Pairs well with a simple side salad or crusty bread. Garnish with fresh herbs for an extra touch. Store leftovers in the refrigerator for up to 3-4 days or freeze for longer storage.
