Ingredients
  

For the syrup

  • 16 lbs ripe peaches, peeled and chopped About 3 large peaches.
  • ½ cup sugar (or honey, stevia, or erythritol) Use for a lighter option.
  • 2 cups water For the syrup.

For mixing

  • cup fresh lemon juice About 2 lemons.
  • 3 cups water or sparkling water For mixing.
  • as needed optional Ice cubes Optional.
  • as needed optional Lemon slices, peach slices, and fresh mint leaves For garnish.

Preparation

  • In a saucepan, combine the chopped peaches, sugar, and 2 cups of water.
  • Heat over medium, stirring until peaches soften and release their juices.
  • Remove from heat, let cool, then strain to obtain a smooth syrup.
  • Pour the syrup into a large pitcher.

Mixing

  • Add fresh lemon juice and stir well.
  • Slowly mix in 3 cups of water or sparkling water, depending on preference.
  • Add ice cubes and garnish with lemon slices, peach slices, and mint leaves.
  • Serve immediately, well chilled.

Notes

For a smoother syrup, blend the peaches instead of just chopping them. Adjust sweetness by adding more or less sugar. Use sparkling water for a fizzy option. Experiment with different garnishes.
