  • 2 pieces ripe peaches, pitted and diced Use fresh, ripe peaches for the best flavor.
  • 2 tablespoons honey Adjust sweetness to taste.
  • 1 tablespoon Dijon mustard
  • 1/4 cup white balsamic vinegar Can be substituted with apple cider vinegar.
  • 1/4 cup olive oil Add more for a thinner vinaigrette.
  • to taste Salt and pepper

Preparation

  • In a blender, combine the diced peaches, honey, Dijon mustard, and white balsamic vinegar. Blend until smooth.
  • While blending, slowly drizzle in the olive oil until the vinaigrette is emulsified.
  • Season with salt and pepper to taste.
  • Use immediately or store in the refrigerator for up to a week.

Notes

This vinaigrette is excellent for drizzling over salads, marinating grilled chicken or fish, and as a dipping sauce for bread. Store in an airtight container and give it a good shake before using.
