For the green beans

  • 1 pound green beans, trimmed Make sure to trim the ends for easier eating.
  • 2 Tbsp olive oil
  • 2 large cloves garlic, minced
  • to taste Salt + pepper
  • 1/2 cup parmesan, freshly grated (recommended: parmigiano-reggiano) Enhances flavor; can be omitted for dairy-free.
  • 1/2 a lemon juice Freshly squeezed for best flavor.
  • 1-2 Tbsp fresh parsley, chopped For garnish.

Preparation

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • Place the trimmed green beans on the baking sheet. Toss them with olive oil, minced garlic, salt, and pepper until evenly coated.
  • Spread the green beans in a single layer on the baking sheet.
  • Sprinkle grated parmesan over the green beans, ensuring an even coverage.

Roasting

  • Transfer the baking sheet to the oven and roast the green beans for about 20 minutes, until lightly browned with melted and slightly crispy cheese.
  • The beans should be fork-tender but maintain a bit of crunch; do not overcook.

Serving

  • Remove the green beans from the oven and top with freshly squeezed lemon juice and chopped parsley. Season with extra salt and pepper if needed.
  • Serve hot!

Notes

These green beans pair well with chicken, fish, beef, or pasta. Serve them hot for the best flavor and texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
