  • 10 small flour tortillas (6-inch) Corn tortillas can be used for a different flavor.
  • 4 oz cream cheese, softened Can substitute with Greek yogurt or sour cream.
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup salsa Choose your favorite type.
  • Olive oil or nonstick cooking spray (for brushing, optional) For extra crunch.

  • chopped green onions
  • chopped cilantro
  • diced jalapeños
  • 1/2 tsp each garlic powder, cumin, chili powder For added flavor.

Preparation

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheese, and salsa. Mix until creamy and fully combined (about 2-3 minutes).
  • Stack the tortillas and wrap them in a damp paper towel. Microwave for 20-30 seconds until warm and pliable.

Assembly

  • Spoon about 2 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll tightly into a cigar shape, seam side down.
  • Place rolled taquitos seam side down on the prepared baking sheet, spaced slightly apart.
  • Lightly brush the tops with olive oil or spray with nonstick cooking spray (optional for extra crunch).

Baking

  • Bake for 15-18 minutes, or until the tortillas are golden brown and crispy. For a deeper color, bake 2-3 minutes longer, checking for burning.
  • Let the taquitos cool for 2-3 minutes before serving.

Notes

Serve hot with sides of salsa, guacamole, and sour cream. For extra flavor, add spices like garlic powder, cumin, and chili powder to the chicken mixture. Leftovers can be stored in an airtight container for up to 3 days.
