  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend) Choose your preferred cheese blend.
  • 1/2 cup green onions, chopped Add additional for more flavor if desired.
  • 1/2 cup salsa Use your favorite type of salsa.
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

Assembly Ingredients

  • 8-10 small tortillas Warm tortillas before using.
  • to spray Olive oil spray For spraying the taquitos before baking.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, green onions, salsa, garlic powder, cumin, and season with salt and pepper.
  • Warm the tortillas in a microwave or on a skillet to make them pliable.
  • Place a generous amount of the chicken mixture in the center of each tortilla and roll them tightly.

Baking

  • Place the rolled taquitos seam side down on a baking sheet lined with parchment paper.
  • Spray the tops lightly with olive oil.
  • Bake for 15-20 minutes or until golden brown and crispy.

Serving

  • Serve the taquitos warm with your favorite dipping sauces.

Notes

To store leftover taquitos, place them in an airtight container and refrigerate for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes until crispy again. For extra crunch, bake a few minutes longer, but watch carefully to avoid burning.
