Ingredients
  

For the Chicken Filling

  • 3 large chicken breasts Cooked and shredded
  • 1 tbsp olive oil For rubbing on the chicken
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 8 oz cream cheese Softened
  • 3 tbsp sour cream
  • 1/3 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 3 large green onions Minced
  • 2 tbsp cilantro Minced
  • 1 lime juiced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 16-18 small flour tortillas

For Dipping

  • 1/2 cup sour cream
  • 1 tbsp cilantro
  • 1/2 lime for dipping
  • 1/4 tsp garlic powder For dipping sauce

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Mix chili powder, garlic powder, cumin, and salt. Rub the chicken breasts with olive oil and season them on both sides.
  • Place the chicken on a lined baking sheet and bake for 20–25 minutes or until the internal temperature reaches 165°F (74°C). Shred the chicken and set it aside to cool.

Filling and Assembling

  • Increase the oven temperature to 425°F (218°C). Line another baking sheet with parchment paper.
  • Microwave the cream cheese for 20–30 seconds to soften it. Stir in sour cream, salsa, spices, green onion, cilantro, lime juice, cheeses, and shredded chicken.
  • Add 2–3 tablespoons of the filling to the bottom third of each tortilla. Roll tightly and place seam-side down on the baking sheet.
  • Optional: Brush the taquitos with melted butter for extra crispiness.

Baking

  • Bake for 15–20 minutes or until golden. Let cool for 5 minutes before serving.
  • For the dipping sauce, mix sour cream, cilantro, lime juice, and garlic powder. Chill until ready to serve.

Notes

Make sure the chicken is cooked all the way before shredding. Don’t overfill the tortillas to prevent them from breaking when rolling. Use a mix of different cheeses for added flavor. Feel free to add your favorite veggies to the filling.
