Ingredients

  • 16 oz refrigerated or frozen cheese tortellini
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 3 cups fresh baby spinach
  • Salt, pepper, and Italian herbs to taste

Instructions

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add the minced garlic and sauté for one minute until fragrant.
  • Pour the chicken broth into the pot and bring to a gentle simmer.
  • Add the tortellini to the pot and cook according to package instructions until tender.
  • Stir in the heavy cream and grated parmesan cheese.
  • Cook the mixture until the cheese melts and the sauce thickens slightly.
  • Add the fresh baby spinach leaves to the pot.
  • Cook for two minutes until the spinach is wilted completely.
  • Season the dish with salt, pepper, and Italian herbs to your personal preference.

Notes

Use high-quality freshly grated parmesan for a smoother, better-emulsifying sauce. If the sauce becomes too thick, add a small splash of additional broth or water to reach your desired consistency. Leftovers should be stored in an airtight container in the refrigerator and consumed within 3 days; note that the pasta may absorb more liquid upon reheating.
