  • 8 ounces elbow macaroni
  • 2 cups cooked and shredded chicken
  • 1 cup BBQ sauce Use smoked BBQ sauce for extra flavor.
  • 1 cup shredded cheddar cheese Can be substituted with mozzarella or pepper jack.
  • 1/2 cup cream cheese
  • 2 cups chicken broth
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Cooking

  • In a large pot, combine the macaroni, chicken broth, BBQ sauce, honey, garlic powder, onion powder, and shredded chicken.
  • Bring to a boil over medium heat.
  • Reduce heat to low, cover, and simmer for about 8-10 minutes or until the macaroni is cooked and the liquid is mostly absorbed.
  • Stir in the cream cheese and shredded cheddar cheese until melted and well combined.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions if desired.

Notes

For added nutrition, consider adding veggies like peas or bell peppers. Stir regularly while cooking to prevent sticking. To store leftovers, cool completely, transfer to an airtight container, and refrigerate for 3-5 days. Reheat with a splash of chicken broth or milk if needed.
