One-Pot Creamy Chicken and Rice

Ingredients
  

1 lb boneless skinless chicken thighs",

"1 cup long-grain white rice",

"1 1/2 cups chicken broth",

"1/2 cup heavy cream",

"1 tbsp olive oil",

"1/2 onion, diced",

"2 cloves garlic, minced",

"1/4 cup grated Parmesan cheese",

"Salt and black pepper to taste",

"Fresh parsley for garnish"

Instructions
 

Heat oil in a large skillet and brown chicken on both sides for 6 minutes per side.

Remove chicken and sauté onion and garlic until soft.

Deglaze with broth and add rice; stir to coat evenly.

Return chicken, cover, and simmer for 15 minutes until rice is tender.

Reduce heat, stir in cream and Parmesan, and cook until sauce thickens.

Season, garnish with parsley, and serve warm.

    Notes

    For a lighter version, use coconut milk or Greek yogurt. Store leftovers up to 3 days in the fridge and reheat with broth for creaminess.
