  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil For cooking the chicken
  • 1 teaspoon chili powder For seasoning
  • 1 teaspoon cumin For seasoning

  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • for garnish Fresh cilantro
  • for serving Lime wedges

Cooking

  • In a large skillet, heat olive oil over medium-high heat.
  • Season chicken with chili powder, cumin, salt, and pepper. Add the chicken to the skillet and cook until no longer pink, about 6-7 minutes.
  • Remove the chicken from the skillet and slice it.
  • Add cooked rice, black beans, corn, and diced tomatoes to the skillet; stir to combine.
  • Cook for another 5 minutes, until heated through.
  • Stir in the sliced chicken and top with cheese.
  • Cover and cook for a few more minutes until the cheese is melted.
  • Serve garnished with fresh cilantro and lime wedges.

Notes

For extra flavor, consider marinating the chicken in the spices for a few hours before cooking. You can use brown rice or quinoa for a healthier twist. Feel free to add extra veggies like bell peppers or zucchini for more nutrients.
