Ingredients
  

Fried Rice Ingredients

  • 2 cups cooked rice
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 cup cooked chicken or ham, chopped (optional)
  • 1/2 cup ketchup
  • Salt and pepper to taste salt and pepper to taste
  • Oil for frying

Egg Mixture Ingredients

  • 2 large eggs
  • 2 tablespoons milk

Instructions
 

Preparation

  • Heat oil in a pan and sauté the onion and carrot until soft.
  • Add the cooked rice and stir fry for a few minutes.
  • Add ketchup, salt, and pepper, and mix well.

Egg Cooking

  • In a separate bowl, whisk together eggs, milk, salt, and pepper.
  • In another pan, heat oil and scramble the egg mixture until softly cooked.

Serving

  • Serve the ketchup fried rice on a plate and top with the fluffy scrambled eggs.
  • Optionally, drizzle with more ketchup before serving.

Notes

Use day-old rice for the best texture. Freshly made rice can be too sticky. Store leftovers in an airtight container in the refrigerator for up to 3 days.
