  • 1 cup vanilla protein powder
  • 1/2 cup nut butter (like almond or peanut butter) Use your favorite nut butter.
  • 1 cup oats Use certified gluten-free oats for a gluten-free version.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup mini chocolate chips (optional) Can be substituted with dried fruit or seeds.
  • 1 teaspoon vanilla extract

Preparation

  • In a large mixing bowl, combine the vanilla protein powder, nut butter, oats, honey (or maple syrup), mini chocolate chips (if using), and vanilla extract.
  • Mix until well combined and a dough forms.
  • If the mixture is too dry, add a little water; if it’s too sticky, add more oats.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Place them on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to set.

Notes

These protein balls can be stored in an airtight container in the refrigerator for up to a week. For longer storage, freeze them for up to three months and thaw in the fridge before enjoying.
