New Zealand Meat Pie

  • 1 tablespoon Olive oil
  • 1 Small onion, finely diced
  • 1 clove garlic, minced
  • 1 pound lean ground beef
  • 0.5 teaspoon Salt
  • 3 tablespoons Flour
  • 1.5 cups Beef stock
  • 1 teaspoon Worcestershire sauce
  • 2 packages pre-rolled butter puff-pastry, thawed in the fridge
  • 3/4 cup Aged white cheddar cheese, finely diced (100g)
  • 1 Egg Egg

Preparation

  • Heat the olive oil in a pan over medium heat. Add the diced onion and cook until it softens.
  • Then add the minced garlic and cook for another minute.
  • Add the ground beef to the pan. Cook until it is browned, making sure to break it into small pieces.
  • Season with salt and pepper, then sprinkle in the flour.
  • Pour in the beef stock and Worcestershire sauce, stirring to combine. Let it simmer for about 10 minutes until the mixture thickens.
  • Remove the beef mixture from the heat and let it cool. Once cooled, mix in the aged cheddar cheese.

Assembly

  • Cut the puff pastry into squares to fit a muffin tin. Place each square into the muffin tin, pressing it down to form a shell.
  • Fill each pastry shell with the beef mixture and cover with pastry to seal the pies.
  • Chill the filled pies in the fridge for about 15 minutes while preheating the oven to 425°F (220°C).
  • Beat the egg and brush it over the top of each pie.
  • Bake for 20-25 minutes or until the pastry is golden brown.
  • Let the pies cool for 10 minutes before serving.

Notes

Make sure the puff pastry is well-thawed before using to prevent it from tearing. If you want extra flavor, you can add herbs like thyme or rosemary to the beef mixture. To ensure the pies maintain their shape, be careful not to overfill them with the beef mixture.
