  • 2.5 lb potatoes (peeled and sliced into 1/8-inch rounds)
  • 1 cup Dubliner cheese (Kerrygold recommended for authentic flavor)
  • 1 tsp fresh chives (minced, for garnish)
  • 4 tbsp butter (melted and cooled slightly)
  • 1/2 cup cream
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic (minced very fine) to distribute flavor evenly
  • 1 pinch nutmeg

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Arrange the sliced potatoes in a single layer on a baking sheet.
  • In a bowl, mix melted butter, cream, salt, pepper, minced garlic, and nutmeg.
  • Drizzle the mixture over the potatoes.

Baking

  • Bake for about 25 minutes or until the potatoes are tender.
  • Remove from the oven and sprinkle Dubliner cheese on top.
  • Return to the oven and bake for another 10-15 minutes until the cheese is bubbling and golden.
  • Once done, garnish with fresh chives before serving.

Notes

Serve warm as a side dish or appetizer. Pairs well with dips like sour cream or horseradish. Can be stored in an airtight container for up to 3 days.
