  • 1 lb ground beef (lean) Use lean ground beef to keep the dish healthier.
  • 8 oz wide egg noodles You can substitute with rice noodles or spaghetti.
  • 1 cup bell peppers (sliced) Feel free to add other vegetables like broccoli or snap peas.
  • 1 cup carrots (sliced)
  • 3 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce Adjust based on personal taste preference.
  • 2 tbsp brown sugar Add more for a sweeter sauce or less for a saltier one.
  • to taste green onions (for garnish)

Instructions
 

Preparation

  • Cook the egg noodles according to package instructions until al dente. Drain the noodles and set them aside.
  • In a large skillet over medium heat, brown the ground beef until it is fully cooked. Drain the excess fat.

Cooking

  • Add the minced garlic, sliced bell peppers, and sliced carrots to the skillet. Sauté for about 5 minutes until the vegetables are slightly softened.
  • In a small bowl, whisk together the soy sauce and brown sugar. Pour this mixture over the beef and vegetables in the skillet.
  • Add the drained noodles to the skillet. Toss everything gently over low heat for 2 minutes until well combined.
  • Serve the dish garnished with sliced green onions.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, place the noodles in a skillet over medium heat or microwave them.
