  • 1 medium head medium head of cauliflower, grated or riced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion and bell pepper, sautéing until soft, about 3-4 minutes.
  • Stir in the garlic, chili powder, cumin, salt, and pepper, and cook for another minute.
  • Add the riced cauliflower to the skillet and cook, stirring frequently, for about 5-7 minutes until tender.
  • Remove from heat, garnish with fresh cilantro, and serve warm as a side dish.

Notes

Make sure to remove excess moisture from the riced cauliflower to prevent it from becoming mushy. Adjust the spices to your liking. For a creamier texture, stir in a splash of lime juice or coconut milk when cooking.
