Ingredients
  

Main Ingredients

  • 2 pounds beef chuck or brisket Use whichever one you prefer.
  • 3-4 dried guajillo chiles Adjust based on spice preference.
  • 2-3 dried pasilla chiles For added flavor.
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions
 

Preparation

  • Toast the dried chiles in a hot skillet until they smell nice.
  • Soak the toasted chiles in hot water for about 15 minutes until they soften.
  • In a blender, mix the softened chiles, beef broth, onion, garlic, cumin, oregano, salt, and pepper before blending until smooth.

Cooking

  • In a big pot, place the beef and pour the mixed sauce over it.
  • Heat it until it boils, then turn down the heat and let it simmer for about 2-3 hours until the beef is tender and easy to shred.

Serving

  • Serve the birria warm, topped with fresh cilantro and lime wedges.
  • Pair with warm corn tortillas for making tacos, and offer chopped onions and more cilantro on the side.

Notes

Allow birria to cool before storing in an airtight container in the refrigerator for up to 3 days. Can be frozen for later use.
