Cooking

  • In a large pot, heat olive oil over medium-high heat.
  • Add beef cubes and brown on all sides.
  • Add onion and garlic, cooking until softened.
  • Stir in green chiles, beef broth, cumin, oregano, salt, and pepper.
  • Bring to a simmer, cover, and reduce heat to low.
  • Cook for 2-3 hours, or until beef is tender.
  • Optionally, serve with tortillas or over rice and garnish with fresh cilantro.

Notes

Make sure to brown the beef well; this adds more flavor to your dish. You can adjust the heat level by varying the type and amount of green chiles you use. For extra depth of flavor, consider adding a dash of lime juice before serving.
