Ingredients
  

Main Ingredients

  • 2 lbs beef chuck roast
  • 3 dried guajillo chiles dried
  • 2 dried pasilla chiles dried
  • 1 each onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp cinnamon
  • 4 cups beef broth
  • Salt and pepper to taste
  • Tortillas (for tacos)
  • Fresh cilantro and onions (for garnish)

Instructions
 

Preparation

  • In a dry skillet, toast the dried chiles until fragrant, then soak them in hot water for about 15 minutes.
  • In a blender, combine the softened chiles, onion, garlic, cumin, oregano, cinnamon, and a splash of beef broth. Blend until smooth.
  • In the crockpot, place the beef chuck roast. Pour the blended sauce over the meat and add the remaining beef broth. Season with salt and pepper.

Cooking

  • Cover and cook on low for 8-10 hours or until the beef is tender.
  • Shred the beef and serve as a stew or in tacos, using the consomme for dipping. Garnish with cilantro and onions.

Notes

Leftover Birria can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
