For the marinade

  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 2 tsp ground cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • Salt and pepper to taste

For the chicken

  • 4 chicken thighs Skin-on or skinless as preferred
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil For cooking
  • Fresh cilantro for garnish Optional, for serving

Preparation

  • In a mixing bowl, combine apple cider vinegar, soy sauce, ground cumin, oregano, chili powder, salt, and pepper.
  • Add chicken thighs to the bowl, ensuring they are well coated with the marinade. Marinate for at least 30 minutes.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onions and minced garlic to the skillet and sauté until they are softened.
  • Add the marinated chicken to the skillet, cooking each side until browned.
  • Pour in the remaining marinade and cover the skillet.
  • Simmer the chicken for about 20-25 minutes or until it is cooked through.
  • Serve hot, garnished with fresh cilantro.

Notes

For an extra punch of flavor, let the chicken marinate overnight. If you prefer a spicier kick, add more chili powder or fresh jalapeño. Pair the dish with lime wedges for a zesty finish.
