  • 4 medium medium zucchinis
  • 1 cup cooked quinoa or rice
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled Omit for vegan version
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  • In a skillet, heat olive oil over medium heat and sauté the diced onion and bell pepper until soft.
  • Add in the scooped zucchini flesh, cherry tomatoes, cooked quinoa or rice, garlic powder, oregano, salt, and pepper, mixing well.
  • Remove from heat and stir in feta cheese.
  • Fill each zucchini boat with the mixture and place them in a baking dish.

Cooking

  • Bake for 25-30 minutes until the zucchinis are tender.
  • Garnish with fresh parsley and serve.

Notes

You can store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Customize the filling with your favorite vegetables or proteins. For a vegan version, replace feta with vegan cheese or nutritional yeast for extra flavor, and consider adding black beans or chickpeas for added protein.
