Ingredients
  

Steak and Grains

  • 1 pound lean sirloin steak
  • 2 cups cooked quinoa or rice Follow package instructions.

Fresh Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper, diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh parsley or basil for garnish

Toppings and Dressings

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste Salt and pepper

Instructions
 

Preparation

  • Cook the quinoa or rice according to package instructions.
  • Season the sirloin steak with salt and pepper and grill or pan-sear to your desired doneness. Let it rest before slicing.
  • In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  • In a small bowl, whisk together olive oil and balsamic vinegar. Pour over the vegetable mixture and toss to combine.

Serving

  • Place cooked quinoa or rice in a bowl, top with sliced steak, and add the vegetable mixture. Garnish with fresh parsley or basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Keep the quinoa or rice separate if possible to maintain texture. Reheat in the microwave before serving. For best flavor, let the steak rest after cooking and use fresh herbs.
