Ingredients
  

For the Patties

  • 1 can chickpeas, drained and rinsed Use canned chickpeas for convenience.
  • 1/2 cup breadcrumbs Adjust amount if mixture is too wet.
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying

For the Yogurt Sauce

  • 1 cup plain yogurt
  • 1 tablespoon fresh dill or mint (optional) Use fresh herbs for best flavor.
  • Salt to taste

Instructions
 

Preparation

  • In a bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
  • Add in breadcrumbs, onion, garlic, parsley, lemon juice, lemon zest, cumin, salt, and pepper. Mix until well combined.
  • Shape the mixture into patties about 2 inches wide.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.

Yogurt Sauce Preparation

  • Combine yogurt, dill or mint, and salt in a bowl.

Serving

  • Serve the patties warm with the yogurt sauce on the side.

Notes

You can store leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through. The yogurt sauce can also be stored in the fridge for about a week. For a twist, you can add grated carrots or zucchini to the chickpea mixture.
