A delightful Mediterranean galette featuring a crispy crust filled with fresh olives, cherry tomatoes, and feta cheese. Perfect as an appetizer or a sweet dish with honey.

Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed Make sure butter is very cold for a flakier crust.
  • 1/4 teaspoon salt
  • 3-4 tablespoons ice water

For the filling

  • 1/2 cup olives, pitted and chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1 each egg (for egg wash)
  • to taste Honey Optional, for drizzling.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles breadcrumbs.
  • Stir in ice water, a tablespoon at a time, until a dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

Assembly

  • On a floured surface, roll the dough into a circle. Transfer to a baking sheet.
  • In a bowl, combine olives, tomatoes, and feta cheese. Spread this mixture in the center of the dough, leaving a border.
  • Fold the edges over the filling, pleating as you go. Brush the edges with beaten egg.

Baking

  • Bake for 30-35 minutes until golden brown.

Notes

To store leftovers, let the galette cool completely and place it in an airtight container in the refrigerator for up to three days. Reheat in the oven for fresh-baked taste. You can also freeze it before baking for up to a month. Use a gluten-free flour option if needed.
