  • 6 large large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, whisk the eggs until well combined.
  • Stir in the diced bell peppers, spinach, feta cheese, cherry tomatoes, salt, pepper, garlic powder, and oregano.
  • Pour the egg mixture evenly into the prepared muffin tin.

Baking

  • Bake for 18-20 minutes, or until the egg bites are set and slightly golden.
  • Allow to cool slightly before removing from the tin.

Notes

Serve warm or at room temperature. Great for brunch or a quick grab-and-go breakfast. Can be paired with salad or fresh fruits. Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months. Avoid overfilling muffin tin to prevent overflow during baking.
