  • 2 cups cooked chicken, shredded Rotisserie chicken works great.
  • 1 each cucumber, diced
  • 1 each bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled Adjust based on preference for saltiness.
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste Salt and pepper
  • to garnish Fresh parsley For garnish.

Preparation

  • In a large bowl, combine the shredded chicken, cucumber, bell pepper, cherry tomatoes, red onion, olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Garnish with fresh parsley before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Keep the dressing separate to maintain salad freshness. Prepare in advance for meal prep, adding dressing right before serving.
