Main Ingredients

  • 1 pound ground chicken Lean ground chicken for healthier meatballs.
  • 1/2 cup breadcrumbs Use plain or Italian seasoned breadcrumbs.
  • 1/4 cup grated Parmesan cheese For flavor and moisture.
  • 1/4 cup chopped fresh parsley Can substitute with other fresh herbs.
  • 1/4 cup chopped red onion Add sweetness and flavor.
  • 2 cloves garlic, minced For aromatic flavor.
  • 1 large egg Acts as a binder.
  • 1 teaspoon dried oregano Adds Mediterranean flavor.
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper To taste.
  • 1/4 teaspoon crushed red pepper flakes (optional) For a spicy kick.
  • 1 tablespoon olive oil for cooking For browning the meatballs.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, red onion, garlic, egg, oregano, salt, black pepper, and crushed red pepper flakes (if using). Mix the ingredients together until well combined, but do not overmix.
  • Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter.

Cooking

  • Heat the olive oil in a large oven-safe skillet over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 5-7 minutes.
  • Once browned, transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through (internal temperature should reach 165°F).
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For best results, do not overmix the ingredients to keep the meatballs moist. Feel free to adjust spices to taste. You can customize by adding spinach or sun-dried tomatoes.
