Ingredients
  

For the Meatballs

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Bowl

  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/2 cup tzatziki sauce
  • Lemon wedges for serving

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix well and form into meatballs.

Cooking

  • Place meatballs on a baking sheet and bake for 20-25 minutes or until fully cooked.
  • While meatballs are cooking, prepare the rice according to package instructions.

Assembly

  • In a serving bowl, layer the cooked rice, cherry tomatoes, cucumber, and red onion.
  • Top with cooked meatballs and drizzle with tzatziki sauce.
  • Serve with lemon wedges.

Notes

For added flavor, try mixing in some chopped fresh herbs like parsley or basil into the meatball mixture. If you prefer a spicier kick, consider adding red pepper flakes to the meatballs. Make sure not to overcook the meatballs to keep them moist and juicy.
