Ingredients
  

For the Veggie Base

  • 2 tablespoons Olive oil For sautéing
  • 1 cup Bell peppers, chopped Any color peppers can be used
  • 1 medium Onion, chopped Yellow or red onions work well
  • 1 cup Chopped tomatoes Fresh or canned
  • 2 cups Spinach, fresh Can substitute with other greens
  • 1/2 cup Green olives, sliced Adjust based on preference

For the Eggs

  • 4 large Eggs Free-range eggs recommended
  • 1 cup Feta cheese, crumbled Use reduced-fat for a healthier option

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add chopped onions and bell peppers. Cook until softened, about 5 minutes.

Cooking

  • Stir in chopped tomatoes, spinach, and green olives. Let simmer for a few minutes until the spinach wilts.
  • Spread the veggie mixture evenly in a baking dish. Make small wells in the veggies and crack the eggs into each well.
  • Crumble feta cheese over the top.
  • Place the dish in a preheated oven at 375°F (190°C) and bake for about 15-20 minutes or until the eggs are set to your desired doneness.

Serving

  • Remove from the oven and let cool slightly before serving.

Notes

For extra flavor, add herbs like oregano or basil to the veggie mix. Sprinkle some red pepper flakes on top before baking for heat. Customize with vegetables or cheese as desired.
