Ingredients
  

For the Cake

  • 1.75 cups 1 and 3/4 cups all-purpose flour
  • 2 cups 2 cups granulated sugar
  • 0.75 cups 3/4 cup unsweetened cocoa powder
  • 1.5 teaspoons 1 and 1/2 teaspoons baking powder
  • 1.5 teaspoons 1 and 1/2 teaspoons baking soda
  • 1 teaspoon 1 teaspoon salt
  • 2 large 2 large eggs
  • 1 cup 1 cup whole milk
  • 0.5 cups 1/2 cup vegetable oil
  • 2 teaspoons 2 teaspoons vanilla extract
  • 1 cup 1 cup boiling water

For the Fudge Frosting

  • melted chocolate and butter
  • powdered sugar and milk to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla. Mix on medium speed for 2 minutes.
  • Stir in boiling water. The batter will be thin.
  • Pour the batter evenly into the prepared pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick comes out clean.
  • Let the cakes cool for 10 minutes in the pans, then remove them to wire racks to cool completely.

Frosting and Serving

  • For the fudge frosting, melt chocolate and butter together, then stir in powdered sugar and milk until smooth.
  • Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  • Serve at room temperature with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Make sure all your ingredients are at room temperature for the best mixing results. Use high-quality cocoa powder for a richer chocolate flavor. Do not skip the boiling water step; it helps to make the cake moist. You can add chocolate chips to the batter for an extra chocolatey treat. Don’t over-bake the cakes; check them with a toothpick and remove them from the oven as soon as they are done.
