  • 1/2 cup vegetable broth
  • 1/4 cup coconut cream (or cashew cream for a vegan option)
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or basil)

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add chopped onions and garlic, and sauté until translucent.
  • Stir in oregano and thyme, cooking for another minute.
  • Add the butter beans and vegetable broth, simmer for about 5-7 minutes to heat through.
  • Stir in the coconut cream, mixing well.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Adjust herbs and add red pepper flakes for spice.
