Ingredients
  

  • 1.5 pounds ripe tomatoes (beefsteak or vine-ripened), halved cherry tomatoes if preferred
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons red grape vinegar or apple cider vinegar
  • 1/3 cup finely chopped red onion
  • 1 clove minced garlic
  • 2 teaspoons chopped fresh basil
  • 2 teaspoons finely chopped flat-leaf parsley
  • 1 teaspoon finely chopped fresh dill (optional)
  • Salt and freshly ground pepper to taste

Instructions
 

  • Slice tomatoes into 1/2-inch cubes and julienne strips
  • Combine olive oil, vinegar, red onion, garlic, basil, parsley, dill (if using), salt, and pepper in a large bowl
  • Add tomatoes to marinade and toss to coat evenly
  • Chill for 2 hours 15 minutes to allow flavors to meld
  • Serve chilled or at room temperature, adjusting seasoning before serving

Notes

Soak red onion in cold water for 10 minutes for milder flavor and rinse before using
Cherry tomatoes can be halved instead of cubed
Shallots work as a subtle onion alternative
Marinade can be prepared ahead and kept refrigerated for up to 2 days
Store in airtight container for up to 24 hours
