  • 1 pound Parsnips (cut into uniform sticks) Ensure even cooking by cutting uniformly.
  • 2 tablespoons Olive Oil (or avocado oil)
  • 2 tablespoons Maple Syrup (or honey/agave as a substitute)
  • 1 tablespoon Fresh Thyme (or dried thyme, one-third amount)
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the parsnips. Cut them into uniform sticks to ensure they cook evenly.

Mixing

  • In a large bowl, combine the cut parsnips, olive oil, maple syrup, fresh thyme, salt, and pepper. Mix well so that each parsnip stick is coated.

Roasting

  • Spread the parsnips in a single layer on a baking sheet. Make sure they have space between them for even roasting.
  • Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender. Flip them halfway through cooking for even browning.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For extra flavor, add minced garlic or a sprinkle of chili flakes to the mix before roasting. Store leftovers in an airtight container for 3-4 days. Reheat at 350°F (175°C) until heated through.
