  • 2 tbsp Olive Oil Avocado Oil can be used as an alternative.
  • 2 tbsp Maple Syrup Honey/Agave can be used based on preference.
  • 2 tbsp Fresh Thyme Use about one-third if dried.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.

Preparation

  • Preheat your oven to 400°F (200°C) to ensure the parsnips roast evenly.
  • Wash the parsnips thoroughly. Peel them with a vegetable peeler and cut them into even-sized pieces, about 1-inch thick.
  • In a large bowl, combine the olive oil, maple syrup, fresh thyme, salt, and pepper. Stir well to mix everything together.
  • Add the chopped parsnips to the bowl and toss them in the mix until well-coated.

Cooking

  • Spread the coated parsnips in a single layer on a baking sheet, ensuring enough space between them for even roasting.
  • Roast for 25-30 minutes, or until golden brown and tender, flipping halfway for a better roast.

Serving

  • Once done, remove from the oven and let them cool slightly. Serve warm and enjoy the delicious flavors!
