  • 2 ripe mangoes, diced Use ripe mangoes for optimal sweetness.
  • 2 cups green cabbage, thinly sliced Red cabbage can be used for color variation.
  • 1 red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1 carrot, shredded
  • 1/4 cup fresh cilantro, chopped Mint can be used as an alternative.

Dressing

  • 2 Juice of 2 limes Adjust lime juice to taste.
  • 1 tablespoon honey or agave syrup Use agave syrup for a vegan option.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the diced mangoes, sliced cabbage, red bell pepper, red onion, carrot, and cilantro.
  • In a small bowl, whisk together lime juice, honey, salt, and pepper until well combined.
  • Pour the dressing over the slaw and toss to combine all the ingredients.
  • Let it sit for 10-15 minutes before serving to allow the flavors to meld together.

Notes

Store any leftover Mango Slaw in an airtight container in the refrigerator for up to 2 days. The texture may soften over time, so it's best enjoyed fresh. Customize the slaw by adding avocado or nuts for extra texture and flavor.
