  • 1/2 cup celery, chopped

Dressing

  • 1/4 cup mayonnaise Use gluten-free mayonnaise if needed.
  • 1 tablespoon Dijon mustard Adjust according to taste.
  • to taste Salt and pepper Add according to your preference.

For Serving

  • Lettuce leaves for serving Any variety of lettuce works.

Preparation

  • In a large bowl, combine the shredded rotisserie chicken, mandarin oranges, red onion, and celery.
  • In a small bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  • Pour the dressing over the chicken mixture and stir until well combined.
  • Serve the chicken salad on lettuce leaves.
