Ingredients
  

For the Meatloaf Layer

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 cup milk Divided
  • salt To taste
  • pepper To taste

For the Cheese Sauce

  • 2 cups milk Remaining milk for the sauce
  • 2 cups shredded cheddar cheese Feel free to experiment with different cheeses.
  • butter For melting
  • 1 tbsp flour
  • paprika To taste
  • dry mustard To taste

For the Macaroni

  • 2 cups uncooked macaroni Cook according to package instructions.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the ground beef, diced onion, breadcrumbs, egg, 1 cup of milk, salt, and pepper. Mix well and press into a greased baking dish.

Cooking

  • Bake the meatloaf layer for about 20 minutes.
  • Cook the macaroni according to package instructions; drain and set aside.
  • For the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for one minute.
  • Gradually whisk in the remaining milk until thickened; add the spices and cheese until melted.
  • Stir the cooked macaroni into the cheese sauce and pour over the meatloaf layer. Top with the remaining cheese.
  • Bake for an additional 25 minutes until bubbly.

Serving

  • Let the casserole cool slightly before serving. It’s great on its own, but you can also pair it with a simple green salad or some steamed veggies.

Notes

To store leftovers, let the casserole cool completely. Then, place it in an airtight container and refrigerate. It should stay fresh for about 3-4 days. To reheat, simply pop it in the oven or microwave until heated through. You can substitute ground turkey or chicken for the beef for a lighter option. Consider adding different vegetables, spices, or herbs to customize the flavor.
