Chicken and Coating Ingredients

  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Use fresh for better flavor.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour Can substitute gluten-free flour.
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced Can adjust based on taste.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F (190°C).
  • In one dish, mix the breadcrumbs, half of the Parmesan cheese, Italian seasoning, salt, and black pepper.
  • In a second dish, beat the eggs and milk together.
  • Place the flour in a third dish.
  • Dredge each chicken breast first in the flour, then in the egg mixture, and finally in the breadcrumb mixture until well coated.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Cook the chicken for about 3-4 minutes on each side or until golden brown.
  • Transfer the cooked chicken to a baking dish.
  • In a small bowl, mix the remaining Parmesan cheese with the mozzarella cheese and minced garlic. Spread this mixture on top of the chicken.
  • Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.

Notes

For extra flavor, let the chicken marinate in the garlic and seasonings for about an hour before cooking. You can customize this recipe by adding herbs like basil or parsley to the breadcrumb mixture. If you want a lighter version, you can bake the chicken without frying it first and skip the olive oil.
