Ingredients
  

Vegetables

  • 2 medium Leeks Clean thoroughly as dirt can hide between layers.
  • 2 medium Carrots Can be substituted with parsnips.
  • 4 medium Potatoes Yukon Golds are recommended.

Liquids and Seasonings

  • 6 cups Water Chicken or vegetable stock can substitute.
  • 2 tablespoons Fish Sauce Can be substituted with soy sauce.
  • 1 cup Heavy Cream Substitute half and half for a lighter version.
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 leaf Bay Leaf Remember to remove before serving.

Fish and Spices

  • 1 pound Salmon Can be replaced with other fish like cod.
  • 3 tablespoons Butter Substitute with olive oil for a dairy-free option.
  • 1 teaspoon Black Pepper Freshly ground is recommended for better flavor.
  • 1 teaspoon Allspice Essential for the traditional flavor.
  • 2 tablespoons Dill Essential for capturing the classic profile.
  • 2 tablespoons Cornstarch Optional based on desired consistency.

Instructions
 

Preparation

  • Begin by thoroughly cleaning the leeks. Slice them into thin rounds.
  • Chop the carrots and potatoes into bite-sized pieces.

Cooking

  • In a large pot, melt the butter over medium heat. Add the leeks and cook until they are soft.
  • Add the black pepper, allspice, and bay leaf to the pot, stirring to combine.
  • Add the chopped carrots, potatoes, and water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the vegetables are tender.
  • Add the fish sauce and salmon to the pot. Cook for another 5-7 minutes or until the salmon is fully cooked.
  • Stir in the heavy cream, lemon juice, and lemon zest. Mix everything well.
  • If you prefer a thicker soup, dissolve cornstarch in a little water before adding it to the pot.
  • Remove the bay leaf before serving. Stir in the dill just before serving.

Notes

Serve Lohikeitto hot in bowls, garnished with extra dill. Pair with crusty bread or rye bread. For storage, let it cool, and store in an airtight container for up to 3 days in the fridge; reheat before serving. Great for freezing in portions.
