For the Potatoes

  • 4 large russet potatoes Choose firm and blemish-free potatoes for best texture.
  • 1 tablespoon olive oil
  • 1 teaspoon salt For seasoning
  • 1 teaspoon black pepper For seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Steak

  • 8 ounces sirloin steak, cut into bite-sized pieces Season before cooking.
  • 1 tablespoon butter For frying

Toppings

  • 1/2 cup shredded cheddar cheese Can substitute with different cheeses.
  • 1/4 cup chopped green onions For garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • Thoroughly wash and scrub the russet potatoes under running water.
  • Dry the potatoes with a clean kitchen towel.
  • Poke each potato several times with a fork to allow steam to escape while baking.
  • Rub the potatoes with olive oil, salt, black pepper, garlic powder, and paprika, ensuring they are evenly coated.

Cooking

  • Place the seasoned potatoes directly on the oven rack and bake for about 50-60 minutes or until they are fork-tender.
  • While the potatoes bake, season the sirloin steak pieces with salt and black pepper.
  • Heat butter in a skillet over medium-high heat.
  • Add the seasoned steak bites and sear for about 3-4 minutes on each side for medium-rare doneness.

Assembly

  • Once the potatoes are cooked, carefully remove them from the oven.
  • Slice each potato lengthwise and slightly mash the insides with a fork.
  • Top each loaded potato with the cooked steak bites.
  • Sprinkle shredded cheddar cheese generously over the steak and potatoes.
  • Return the loaded potatoes to the oven for 3-5 minutes or until the cheese is melted and bubbly.
  • Remove the loaded baked potatoes from the oven and garnish with chopped green onions.

Notes

Serve loaded baked potatoes hot from the oven. Add extra toppings like sour cream, bacon, or jalapeños for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
