Instructions
 

Marinating the chicken

  • In a bowl, mix lime juice, smoked paprika, garlic powder, onion powder, cumin, olive oil, salt, and pepper.
  • Marinate chicken breasts in this mixture for at least 30 minutes.

Cooking the chicken

  • Preheat the grill or a skillet over medium-high heat.
  • Cook the marinated chicken for 6-7 minutes per side or until fully cooked through.
  • Remove from heat and let rest.

Preparing the avocado salsa

  • In a separate bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, and lime juice to make the avocado salsa.

Serving the dish

  • Serve grilled chicken topped with avocado salsa.

Notes

If you have leftovers, store the grilled chicken in an airtight container in the refrigerator for up to 3 days. Keep the avocado salsa in a separate container. It’s best to consume the salsa within one day to prevent the avocados from browning. For best flavor, marinate the chicken longer and use fresh ingredients for the salsa. You can customize the salsa by adding other vegetables or using shrimp or fish instead of chicken.
