  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 2 whole lemons (juiced)
  • 4 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and cut the baby potatoes in half.
  • In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add the potatoes to the bowl and toss until they are evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Roast them in the preheated oven for 30-40 minutes, or until they are golden and crispy, stirring halfway through.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, add some chopped fresh herbs like thyme or rosemary. Make sure the potatoes are in a single layer on the baking sheet to help them crisp up nicely. Adjust the lemon juice and garlic according to your taste preference.
