Ingredients

  • 1 cup couscous
  • 1 1/4 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • In a medium saucepan, bring the water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and parsley.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  • Add the couscous to the vegetable mixture and pour the dressing over. Toss to combine. Serve chilled or at room temperature.

Notes

This salad can be served on its own or as a side to grilled meats or fish. Garnish it with extra parsley for a pop of color. You can also add a sprinkle of feta cheese for added flavor. Leftover salad can be stored in an airtight container in the fridge for up to three days. Stir well before serving again.
