  • 0.5 cups butter, softened

Oat Topping

  • 1 cup oats
  • 0.5 cups brown sugar
  • 0.5 teaspoon salt

Filling Ingredients

  • 1 cup lemon juice Use fresh lemon juice for best flavor.
  • 1 can sweetened condensed milk
  • 3 large eggs
  • 1 tablespoon lemon zest Don't skip this for added aroma and flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the flour, powdered sugar, and softened butter until the mixture becomes crumbly. Press this mixture into a greased 9x9 inch pan to form the crust.

Topping

  • In another bowl, combine the oats, brown sugar, and salt, then sprinkle this mix over the crust.

Filling

  • In a separate bowl, whisk together the lemon juice, sweetened condensed milk, and eggs. Pour this mixture over the oat topping.

Baking

  • Bake for 25-30 minutes or until the bars are set.

Cooling

  • Allow to cool before cutting into bars. Serve and enjoy!

Notes

Lemon Cream Pie Bars are best enjoyed chilled or at room temperature. Cut them into squares and serve plain or with powdered sugar on top. They pair well with whipped cream or vanilla ice cream.
