Ingredients
  

For the base

  • 200 g Marie biscuits Crushed into fine crumbs
  • 1/2 cup unsalted butter Melted
  • Zest of 1 lemon

For the filling

  • 1 can sweetened condensed milk
  • 1 cup fresh lemon juice

Instructions
 

Preparation

  • Crush the Marie biscuits into fine crumbs.
  • In a bowl, mix the crushed biscuits with melted butter and lemon zest until well combined.
  • Press the biscuit mixture into the base of a lined baking tray.
  • In another bowl, combine sweetened condensed milk and fresh lemon juice until smooth.
  • Pour the lemon mixture over the biscuit base and spread evenly.
  • Refrigerate for at least 4 hours or until set.
  • Cut into slices and serve chilled.

Notes

For a brighter lemon flavor, add more lemon zest to the filling. Ensure the biscuit base is pressed firmly to avoid crumbling when you cut into slices. If you like it sweeter, you can add a little sugar to the lemon mixture. Store in an airtight container in the refrigerator for up to one week.
